Baklava No Bake Energy Balls

These baklava balls are a perfect option if you love the baklava and the texture of its filling. These no-bake energy bites will satisfy the craving, with less calories, no refined sugar, and more nutrition.

 
 

This is such a great snack or healthy dessert recipe. These energy balls taste just like the chewy, nutty and spiced filling of baklava. They’d be a great dessert after a Greek or Mediterranean style dinner, but we enjoyed them as an afternoon snack. This energy ball recipe is made with nutritious Mediterranean Diet ingredients like dates, honey and nuts. I personally love Baklava with cardamom, so I’ve added that and cinnamon for the spice.

Recipe for ‘Baklava No Bake Energy Balls’

Yields: 11 balls

Prep time: 15 minutes

Ingredients

  • 1/2 cup nuts (I mixed raw walnuts with roasted pistachios (more pistachios than walnuts)

  • 4 pitted deglet dates

  • 1 tsp good honey

  • 1 tsp filtered water

  • 1/4 tsp ground cinnamon

  • 1/4 tsp ground cardamom (I like these cardamom forward, if you’re not sure you can start with 1/8 tsp!)

  • 1/8 tsp fine sea salt

  • 1/4 cup oat flour (made from whole oats blended until fine in the blender)

Directions

  1. Add dates to food processor and blend until very small bits

  2. Add in honey, water, nuts, salt, cinnamon and cardamon. Blend until mixture forms a grainy paste. Scrape sides and corners as needed.

  3. Add in oat flour and pulse until the mixture clumps together and is fully blended

  4. Measure out a heaping 1 tsp of mixture, squeeze to compact and roll into a ball.
