Baklava No Bake Energy Balls
These baklava balls are a perfect option if you love the baklava and the texture of its filling. These no-bake energy bites will satisfy the craving, with less calories, no refined sugar, and more nutrition.
This is such a great snack or healthy dessert recipe. These energy balls taste just like the chewy, nutty and spiced filling of baklava. They’d be a great dessert after a Greek or Mediterranean style dinner, but we enjoyed them as an afternoon snack. This energy ball recipe is made with nutritious Mediterranean Diet ingredients like dates, honey and nuts. I personally love Baklava with cardamom, so I’ve added that and cinnamon for the spice.
Recipe for ‘Baklava No Bake Energy Balls’
Yields: 11 balls
Prep time: 15 minutes
Ingredients
- 1/2 cup nuts (I mixed raw walnuts with roasted pistachios (more pistachios than walnuts) 
- 4 pitted deglet dates 
- 1 tsp good honey 
- 1 tsp filtered water 
- 1/4 tsp ground cinnamon 
- 1/4 tsp ground cardamom (I like these cardamom forward, if you’re not sure you can start with 1/8 tsp!) 
- 1/8 tsp fine sea salt 
- 1/4 cup oat flour (made from whole oats blended until fine in the blender) 
Directions
- Add dates to food processor and blend until very small bits 
- Add in honey, water, nuts, salt, cinnamon and cardamon. Blend until mixture forms a grainy paste. Scrape sides and corners as needed. 
- Add in oat flour and pulse until the mixture clumps together and is fully blended 
- Measure out a heaping 1 tsp of mixture, squeeze to compact and roll into a ball.
