Blueberry, Banana Oat Bread Pancakes


I have some exciting news! You don’t have to give up pancakes when you want to eat healthy and clean. The key is to make them healthier (more nutritious, cleaner ingredients) in some way. But even if you want the real thing, it can fit into a healthy diet infrequently. Carbs and butter aren’t evil, you just want to choose nourishing types (like more fiber and less processed) and make them more balanced (with fat and protein).

Pancakes are typically considered unhealthy because they’re carbohydrate and calorie dense (and inflammatory), between the white flour based mix, butter and syrup and don’t provide much nutrition.

To healthify them, I add or solely use whole grains. For these, I used rolled oats and Arrowhead Mills sprouted wheat pancake mix. Then I added more protein with an extra egg and Greek yogurt. With banana, blueberries, whole grains and protein, these pancakes become a nourishing and satisfying meal!


  • 2 mashed ripe bananas

  • Blueberries

  • 1/2 cup pancake mix

  • 1/2 cup rolled oats

  • 2 whole eggs

  • Cinnamon (I added about 2 tsp, can more or less depending on your preference)

  • 1/2 cup Greek yogurt

  • A splash of vanilla extract

  • A little water to thin if needed to get your desired texture. We like our thicker so I didn’t add water.


  1. Mash and stir the bananas until creamy. Add rest of wet ingredients and mix.

  2. Add dry ingredients and mix

  3. Heat non-stick skillet to medium and grease pan with fat (I used coconut oil)

  4. Spoon desired amount of batter, add blueberries to top

  5. Flip when edges look dry and bubble form

  6. Top with butter and real maple syrup, I add sea salt to the top because we loOove salty sweet foods.
